How Can You Make a Gluten-Free Roll So Lofty and Delicious?

The secret is hidden inside this simple ingredients list, passed down from a native Brazilian woman:

Pão De Queijo Ingredients

Tapioca Flour, Polvilho Sour, Milk, Salt, Cheese and Butter

Do You See The Secret? It's in the flour.

Tapioca flour and Polvilho Sour are a flour made from the Cassava Plant. The Cassava Plant also known as yucca is used to make tapioca flour In the U.S. you might actually have one of these plants growing in your landscaping, and you might call it a yucca plant. It's also called a manioc, a yuca, or a Cassava plant. The Cassava plant is a woody shrub native to South America.

The Yucca, or Cassava Plant is the sort of plant where every part is good for something. The fibrous leaves are made into a rough cord or string, the woody flower stalk is an excellent fire-starting material, and the roots can be pounded into a delicious, naturally gluten-free flour.

It is harvested extensively in its native regions for its edible root. Cassava flour is made from the root of the plant and it is also called Tapioca flour, Tapioca starch or Polvilho in Portuguese. Cassava flour can also replace wheat flour, and since it is naturally Gluten-Free  it is used by people with wheat allergies such as celiac disease.

If you don't feel up for pounding the roots yourself, this pre-made recipe will give you all the satisfaction of a healthy, gluten-free, native Brazilian Comfort Food, and all you have to do is pop it in the oven and wait for the smell of the cheese buns to start wafting out.
